Vinification

After the harvest, the production process begins with sorting the old apple and pear varieties according to their degree of ripeness. Then they are pressed or stored according to their variety. Before the juice of apples and pears is gently extracted by a pneumatic press, the fruits are crushed between two rollers. Today's machines were modeled on old, tried-and-true equipment. To compensate for the lack of alcohol, oak vines and currants are sometimes added during the pressing process. This gives structure and depth. Afterwards, the wine is stored in cooled steel tanks to prevent fermentation and alcohol. To make the tasty products, Jörg Geiger adds various spices, herbs and flowers to some of the juice. After the juice has taken on the aromas, the final cuvée is created. Old fruit varieties contain considerably more aromatic substances and sugar. This makes them much more flavorful. Due to higher tannins and more acidity, they give the sparkling fruity products more structure and balance than modern varieties could
