- The wine obtained from the first fermentation, after some decanting-operations, is left together with the yeasts until spring and then it is transferred into the pressure-vat. The second fermentation is carried on slowly, with great care, and then the wine is left in contact with the yeast until a few days before the bottling, that is made at the end of June
