- Vinification
- The harvest usually starts at the end of September. The grapes are selected and harvested by hand. The grapes are brought to the winery, destemmed and lightly pressed. Fermentation then takes place in stainless steel tanks and lasts about 15 days. During this phase, the temperature rises to between 20° and 24° C. At the end of fermentation, the wine is drained of its skins, the mash is pressed and is then transferred to stainless steel tanks. Around mid-November, the wine made in October is left on the marcs of the Amarone and undergoes a second fermentation that lasts about 15 days. The wine is then aged for 18 months in large wooden barrels
- Characteristics
- Intense garnet red. On the nose, there are aromas of ripe fruit, cherries, plums and blackcurrant. In addition to sweet notes of vanilla, cinnamon and cloves, this Ripasso also brings out floral hints of geranium and violets. The palate is soft, balanced and full-bodied

- It is perfect with grilled meats and excellent with succulent main courses such as pasta or risotto. It also pairs very well with cold cuts and hard cheeses
