- After destemming and pressing, 12 days of maceration on the skins. Expansion and refinement. Then racking and maturing in Allier oak barrels for 12 months
- Characteristics
- Purple red with violet tones. Lively and typical of the Nero d’Avola of the Noto area: red fruits such as plums, currants and liquorice. Then carob, peppercorns and canned figs, also mustard. The decisive factor here is not the weight of the tannin, but rather its density. The palate has a centrifugal effect, spreading the scent outwards from the center and filling every corner with angular matter. This is how we interpret Nero d’Avola from south-east Sicily
