- Vinification
- The harvest is done by hand in the second half of September. The alcoholic fermentation takes place temperature controlled at 20 ° C in stainless steel tanks, with frequent pumping of the pomace. Afterwards, the wine is transferred to cement tanks where the malolactic fermentation takes place
