- Selective hand harvest in crates, very gentle destemming to leave the berries completely intact, maceration and fermentation in stainless steel at controlled temperature for about 20 days with periodic submersion of the lid, pumping over twice a day with separation of the pips, repeated destemming, gentle pressing. After malolactic fermentation in November, the wine is aged in cement tanks for at least 6/8 months and then in bottle for at least 6 months (Bottling September 2020)
