- Warm fermentation of the skins and cold fermentation of the juice! The fermentation starts, then the juice is drained and cooled. The skins continue the fermentation process without being pressed. In the process, they generate heat and release tannins, colour and body. At the right moment, the very cold must is added and fermentation continues at a low temperature. The wine rests in cement barrels for two years, then six months of refinement in the bottle
- Characteristics
- Intense red with a unique brilliance. The Prima Mano embraces aromas of rose petals, raspberries, blueberries, black pepper. Notes of dried apricots, maraschino cherries, lemon and eucalyptus. The taste is concentrated but not bulky, elegant with a pleasant softness and an exceptionally long finish
