- Vinification
- The grape harvest does not take place until the second half of October and, if possible, only in specific vineyards, such as Ognisanti. The aim is to produce a wine which, in its size, embodies all of the sweet and soft taste of this terroir. The vinification involves a long maceration and subsequent fermentation at a constantly controlled temperature of 20 °. Refinement for 18 months in French oak barrels, 1/4 of them in new and ¾ in used. This is followed by further refinement in the bottle for at least 6 months
- Characteristics
- Intense red color with garnet reflections. On the nose it is characterized by the variety of scents that combine well-ripened red fruits such as cherry compote and spicy amarena cherries with eucalyptus. In its softness on the palate it is full and enveloping with sweet notes of prunes and cherries
- Food recommendation
- The Ognisanti goes very well with demanding and intense dishes that are steamed and emphasized with the velvety notes typical of the Valpolicella Superiore. Ideal with grilled meat, roasts, game dishes and aged cheese
