- The plots are harvested at different times and immediately transferred to the winery. After destemming and crushing remains in cryomaceration for a few hours. Fermentation then takes place in temperature-controlled stainless steel tanks, also separated by parcel. After fermentation, the wine is transferred to other steel tanks where it matures and stabilizes for up to about 4 months. The blend of the different plots is combined and stored in stainless steel tanks for 1 month. After bottling, the wine matures for some time in the bottle
