- Selective manual harvest in crates, very gentle destemming to leave the berries completely intact, maceration and fermentation in stainless steel at controlled temperature for about 20 days with periodic submersion of the lid, pumping over twice a day with separation of the pips, repeated destemming, soft pressing. Malolactic fermentation is followed by ageing in French barriques tonneaux for about 24 months and at least 6 months in bottle
