- Mea culpa goes well with tender beef roulades with a delicious filling consisting of pickled prunes, a few slices of lardo, sautéed onions, chopped parsley and roasted pine nuts
- The prunes are marinated for a few days in a mixture of one third dry sherry, one third rum and one third water
- Add the prune marinade to the sauce later, along with a strong dash of red wine
- Serve with fresh almond broccoli or beetroot vegetables and homemade gnocchi or hand-scraped spaetzle as a side dish
