- All the processes, in the vineyard and in the cellar, are meticulously done by hand. Only perfectly ripe bunches are carefully selected and collected in 20 kg boxes. Fermentation takes place in steel tanks at a controlled temperature, using indigenous yeasts. Frequent pumping over and punching down are carried out strictly by hand. The wine ages at least 18 months in 225 and 500 liter French oak barrels, followed by at least 6 months in the bottle
