- Vinification
- All work in the vineyard and in the cellar is carried out with meticulous manual labor. Only perfectly ripe grapes are carefully selected and harvested in 20 kg boxes. Fermentation takes place in temperature-controlled steel tanks using indigenous yeasts. Frequent pumping over and pressing down is done exclusively by hand. The wine is aged for at least 18 months in French oak barrels with a capacity of 225 to 500 liters, followed by at least 6 months in bottle
