- The harvest is done by hand in small baskets. It is read at 3 different times in order to produce different base wines (acidic / ripe / overripe). After the strict selection, a gentle, pneumatic pressing takes place. The primary clarification takes place by sedimentation. This is followed by spontaneous fermentation, temperature-controlled in stainless steel tanks. The wine matures on the wine yeast for approx. 3 months, after which the 3 types of wine are assembled and the bottle is left to rest for at least 2 months

- Straw yellow with greenish reflections, crisp, fresh acidity, intense citrus aromas with a floral touch that is reminiscent of macchie. A touch of orange blossom. Nice combination of light minerality and freshness
