- Slow fermentation of the very ripe grapes for ten weeks at very low temperatures (7°C) in steel tanks to preserve the aromas of fresh fruit. The Fiano grapes are briefly dried. Aging takes place for three months in steel tank and for another three months in bottle
- Characteristics
- Pale straw yellow color with greenish reflections. Fresh fruit and a pleasant floral note define the aroma. Very round and refreshing. A full-bodied, interesting white wine with power, expression and character. It features a slight fruit sweetness paired with crisp, good and refreshing acidity and a nice length - very pleasant to drink. According to A Mano the most unusual white wine of Puglia, perhaps even Italy

- All fish dishes, appetizers, chicken and salads, perfect in spring with asparagus dishes and in summer with fresh pasta dishes like spinach ravioli. But also to be enjoyed as a wonderfully fresh aperitif
