Description
- The variety used is Cappero di Racale, which has been included by Slow Food as Comunità del Cibo, and has been awarded by Gambero Rosso in July 2021 as the best capers (https://www.gamberorosso.it/notizie/classifiche/i-migliori-capperi-sotto-sale-italiani-la-classifica).
- The Capperi di Racale are grown by several farmers in the area that goes from Racale to Marina di Mancaversa, in the southwestern part of Salento.
- The processing of the capers is very laborious. To ensure this quality only the smallest capers are selected, harvested can be a maximum of 5 kg per farmer, then they are processed, ripened for about 4 months, dried and salted with sea salt from Margherita di Savoia, that is from Puglia.
- Overall, capers need little water to grow.
