- Soft pressing of the destemmed grapes, short cryomaceration with dry ice, fermentation of the clear must at controlled temperature. Second fermentation in the bottle in the cellar vault at 13° C. Maturation on the lees for 39 months at 13° C

- Fresh citrus, white fruit and brackish aromas, a hint of aniseed and light hints of bread crust. The perlage caresses the palate and underlines its freshness and complexity. The salty finish and the long aftertaste make for a captivating taste
