- The Frappato variety is ripe harvested and vinified, producing a fresh fruity wine. The Nero d'Avola grapes stay on the maturity point on the stick and slowly begin to dry. This extreme late tea is also vinified and later, at the discretion of the cellar master, brought together in a Cuveé. The wine matures in steel tanks for several months
