- The harvest usually takes place in the second week of September. After a careful selection, the grapes are placed one layer high on plastic boxes and then placed in a drying plant for storage. The grapes remain in the drying plant for several months during the winter, undergoing physical drying processes. The average reduction in water content is between 30% and 35%. The result is a higher concentration of sugar and other components. This process of drying the grapes is called "appassimento". After being collected in the drying plant, the grapes are brought to the winery. Here they are destemmed and pressed. Before fermentation, the mash macerates at 2 to 5° C. Fermentation lasts about 20 days and takes place at temperatures between 20° and 24° C. After fermentation, the wine is separated from the mash and aged for 24 months in barrique and tonneau barrels. Before bottling, the blend is aged for 6 months in stainless steel tanks and a further 12 months for ageing in bottle
