Vinification

The harvest of the very ripe grapes was done by hand. Fermentation of the individual grape varieties took place at controlled temperature with long contact of the berry skin. After a long fermentation, the juice was separated from the berry skin and the mash was gently pressed. The wine was aged for more than two years in barriques of different origins and then rested in the bottle for a further period

Characteristics

Dark black red and of great substance. The nose is very complex and intense with notes of ripe red and black fruits such as cherries, plums and wild berries preserved in alcohol. Then some pepper, cardamom, nutmeg, followed by undergrowth and a balsamic finish. The wine is soft and velvety with a well-integrated tannin structure and a persistent, aromatic finish

Pair with pasta with game stew, BBQ, wild boar and venison stew and medium hard cheeses
