- After harvesting, the grapes are pressed and left to ferment in stainless steel tanks. Fermentation takes place at a controlled temperature of less than 28° C. Daily controls and adjustments are made; in addition, "destacking" is carried out on the fourth and seventh days of fermentation. Once the phases of alcoholic fermentation and extraction are completed, racking and pressing of the skins can begin, creating all the necessary conditions for malolactic fermentation. Once the latter process is completed, decanting must be done to decide when is the best time to barrel and finish the Sottovoce Merlot. The aging phase lasts about 10-18 months, during which our chief oenologist carries out regular analytical and sensory controls
