- The grapes are picked by hand and then destemmed. A portion of the grape is immediately pressed and it follows a 14-day mash fermentation, followed by the expansion of large wooden barrel. The smaller part of the grapes is dried for 60 days and then squeezed. After this process, a second fermentation is started with the base wine and dried grapes left on the lees
