- After a short stay in a temperature-controlled environment until the right degree of dryness is reached, the grapes are destemmed and gently crushed; fermentation takes place in steel tanks at controlled temperature with prolonged contact with the skins; after decanting, the wine is aged for six months in small wooden barrels on the total lees, then it is decanted and kept in steel tanks until bottling. The yield of grapes for wine is about 48%
