- After a soft pressing of the destemmed grapes, a short cryo-maceration of about 4 hours in tanks and a static decantation at 0°C follows. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. The wine obtained is kept on its fine lees for three months (Bottling March 2021)
