- For Malvasia Nera di Lecce, harvesting is done manually in the early hours of the morning during the third decade of September, followed by a light drying. Syrah is harvested by machine during the first ten days of September. After being crushed, grapes ferment separately at controlled temperature in steel tanks with maceration for 10-12 days and programmed pumping over. Once malolactic fermentation is completed, only Malvasia is aged in barrique for 12 months whereas Syrah is aged in steel tanks
