- Selective manual harvesting into boxes, very delicate destemming to leave the berries completely intact, maceration and fermentation in stainless steel at a controlled temperature for about 20 days with periodic submergence of the cap, 2 repassings a day with separation of the seeds, repeated delestage, soft pressing. After malolactic fermentation in November, the wine is aged in cement tanks for at least 6/8 months and then in the bottle for a period of no less than 6 months (Bottling February 2020)
