- Selective hand harvest, maceration and fermentation in stainless steel at controlled temperature for about 20 days with periodic submersion of the marc. After malolactic fermentation, refinement in cement tanks for at least 6/8 months and then in bottle for at least 6 months (Bottling July 2020)
