- The very high quality products (Balsamico Tradizionale) are bottled in the bottle defined by the Consortium (monitoring body) and bear the seal of the Consortium. These products must be aged for at least 12 years. They are tasted and evaluated by the Consorzio's Evaluation Committee. The balsamic must score over 240 points to obtain the red seal, over 260 points to obtain the silver seal and over 300 points to obtain the golden seal
