Vinification: When the grapes are perfectly ripe, the harvest begins. The grapes enter the winery where they are destemmed and pressed, and are fermented with the skins in the vinificators. Alcoholic fermentation takes place at a controlled temperature of 25°C, pumping over is programmed and delestage is carried out every 3 days. 10 days later the wine is drawn off and the marc is pressed. The resulting wine is transferred to stainless steel tanks where the conditions for malolactic fermentation are created. Between the end of September and January, the ritual racking is carried out to clarify the wine before it is placed in wood. This Pinot Nero is aged in large wood (3,000-liter elliptical barrels) and small wood (new 225-liter barriques). Pinot Nero IGT Veneto Sottovoce 47 Anno Domini is aged between 9 and 15 months. When the oenologists believe that the perfect balance between fruit and vanilla has been achieved, they determine the blend of Pinot Noirs aged in different capacities and wood types. The wine obtained from the blend is left to rest for 2 months and then bottled, where it ages for another 3 months
