Vinification

After the hand-picking, the strict selection and destemming takes place via vibration. After a cold maceration of 5 days, spontaneous fermentation takes place in large stainless steel tanks. During fermentation, the mash is regularly gently circulated. The malolactic fermentation also takes place spontaneously, after which the wine is rearranged: 50% in oak barrels, 20% in concrete containers and 30% in French oak barrels (new and old). The wine is regularly moved to other barrels and aged for a total of 12 months. Finally the wine is clarified and bottled

Characteristics

Dense, very concentrated color. Lush nose with very berry characteristics. Velvety with present tobacco notes. Strong tannins and some caramel
