Vinification

The overripe grapes are picked by hand. Maceration: 18 days on 80% of the mass, 25 days on 20% (with indigenous yeasts, which are selected in the vineyard on selected materials of different types). Fermentation at a controlled temperature between 24-26 ° C. The expansion follows for 18 months in barriques in high quality French and American wood

Characteristics
